225g lambs or pigs kidney
1/2 teaspoon bicarbonate of soda
l teaspoon cider vinegar or Chinese white rice vinegar
1/2 teaspoon salt
1 groundnut oil
1 dried red chilli
1 tablespoon garlic finely chopped
1 tablespoon dark soy sauce
2 teaspoons dry sherry or rice wine
1/2 teaspoon roasted Sichuan peppercorns finely ground (optional)
1/2 teaspoon sugar
1/4 teaspoon salt
1 teaspoon sesame oil
1 teaspoons spring onions finely chopped
Using a sharp knife remove the thin outer kidney membrane.
Then with a sharp cleaver or knife split the kidneys in half by cutting horizontally.
Now cut away the small knobs of fat and any tough membrane surrounding them.
Next score the kidneys in a crisscross pattern and cut them into thin slices.
Toss the kidney slices with the bicarbonate of soda and let them sit for about 20 minutes.
Then rinse them thoroughly with cold water and toss them with the vinegar and salt.
Put them into a colander and let them drain for at least 30 minutes preferably longer.
Blot the kidney slices dry with kitchen paper.
Heat a wok or large frying pan over a high heat until it is very hot.
Add the oil and the dried chilli.
Stir fry to flavour the oil for about 20 seconds.
Then add the kidney slices and stir fry coating the kidneys with the oil for about 1 minute.
Now add the rest of tbe ingredients and toss them together well with the kidneys.
Continue to stir fry the mixture for about 2 minutes or until the kidney edges begin to curl.
Turn the mixture on to a warm serving platter garnish with the spring onions and serve at once.
Serve it with Sweetcorn Soup with Crabmeat and plain steamed rice.
Lambs kidneys are delicious when they are simply stir fried. As a young cook I was taught a wonderful technique for cleaning kidneys which l use to this day. First the kidneys should be scored and tossed in baking soda; this helps to tenderise them and to neutralise their acidity. Then the bicarbonate of soda is rinsed off and they are tossed in a mixture of vinegar and salt to remove any remaining bitterness. The result is a clean and fresh tasting kidney. This dish can also be made with pigs kidneys.
