Strawberry shortcake recipe and books|

200g Selfraising flour
75g Caster sugar
lightly toasted and chopped
100g Butter or margarine
60ml top of the milk
1 tin strawberries drained
125ml double cream whipped and sweetened
Note: Peaches or other fruit may be substituted for strawberries
Place the flour salt sugar and butter in a bowl and rub in on Speed 1 increasing to 3 until the mixture looks like breadcrumbs.
Tip in the nuts then add the egg and milk to mixture in bowl.
Bind together on speed 1.
Divide the mixture between 2 well greased 17.5 20 cm sandwich tins.
Bake in a hot oven 425¡F/220¡C Gas Mark 7 for 1520 minutes.
Turn shortcakes out and allow to cool.
Whip double cream on Speed 2 with sugar to taste.
This takes only a few seconds.
Place half the fruit and cream on one layer and top with the other.
Now arrange remaining fruit attractively on the top layer and decorate with the cream.
