Stuffed barbecued sea bass recipe and books

3/4 teaspoon turmeric
3/4 teaspoon cayenne pepper
1/2 teaspoon cumin
2 tablespoons yoghurt
2 tablespoons chopped tomato
2 red onions peeled chopped and sautˇed
1 tbsp grated fresh ginger
1cm cinnamon stick
1 1/2 teaspoon coriander seeds
3 cardamom pods
1 clove garlic peeled
160ml vegetable oil
1 x 900g seabass deboned (ask your fishmonger to bone and scale an ungutted fish from the back)
6 spring onions
90g paneer grated

Place the spices yoghurt tomato red anion ginger and oil in a blender together with 1 tsp salt and blend to a fine puree.
Pour over the fish and marinate for at least 4 hours (or overnight).
Mix the spring onions with the paneer 2 tbsp of the marinade and a pinch of salt.
Use this to stuff the fish sealing the opening with a strip of foil.
Secure the fish in a fish grill and barbecue for about 15 minutes each side basting occasionally with the remaining marinade.

Good hot or cold. It also works with trout.
