Free Stuffed trout recipe and books|

4 trout cleaned
60g fresh breadcrumbs
4 mushrooms chopped
2 shallots chopped
2 tbsp parsley chopped
2 tsp fresh thyme chopped
grated rind of 1/2 lemon
2 tbsp dry sherry
2 tbsp flaked almonds
4 tbsp melted butter
Soak the Romertopf.
Rinse and dry trout.
Mix together breadcrumbs mushrooms shallots parsley thyme and lemon rind.
Season and stir in the sherry to moisten stuffing.
Divide into four pressing stuffing into fish body cavities.
Lay trout in the soaked clay pot.
Sprinkle with almonds then drizzle melted butter over the top.
Cover pot and place in a cold oven.
Set oven to 220C/425F/gas mark 7.
Cook for 30 to 35 minutes.
Uncover pot and cook for further 5 to 10 minutes or until fish is cooked through.
Check by piercing thick part of one fish.
Serve with lemon wedges
