Stuffed trout recipe and books

2 large trout filleted
2 handfuls small spinach leaves
finely grated rind of half a lemon
4 thin slices lardo or pancetta

Preheat the oven to 200C/400F/gas mark 8.
Lay two of the trout fillets in a roasting tin or baking dish.
Wash the spinach and drop into a hot pan.
Cover with a lid and let it cook for a minute or two in its own steam.
As soon as it has wilted but while it is still brightly coloured remove drain and season with the lemon rind a little salt and black pepper.
Put the spinach on top of the trout fillets.
Place the other two fillets on top.
Carefully wrap the stuffed fish with the slices of lardo pancetta or bacon.
Bake for 20 minutes in a preheated oven until the fish is juicy and opaque and the fat is golden. Serve hot with a salad of crisp leaves.

Fat has always been used to bring out the flavour of trout and salmon especially bacon fat for trout and goose for salmon. Here is a variation on that theme you can use lardo or pancetta thinly sliced or at a push streaky bacon. The fat keeps the fish beautifully moist.
