Summer vegetable soup recipe and books|

75g young pea pods (or mangetout)
150g young fresh peas
4 young carrots
125g cauliflower florets
4 new potatoes
1 25g fine green beans
100g young spinach leaves
1 level thsp cornflour
1 tbsp fresh parsley chopped
Wash or scrape the vegetables and chop into large pieces if necessary.
Place everything except the spinach in a large saucepan and cover with 1L cold water.
Add 2 tsp salt and plenty of black pepper.
Bring to the boil.
Boil briskly for about 5 minutes until the potatoes are just tender then add the spinach.
Mix 2 tbsp of the milk with the cornflour then stir into the remaining milK.
Add to the pan and cook over a medium heat stirring for about 5 minutes.
Add a knob of butter taste for seasoning and serve in a warm tureen sprinkled with parsley.
Finns always cook the vegetables in water; use stock if you prefer.
