sweet potato and peanut bhajis
2 medium sweet potatoes finely sliced then sliced into matchsticks
1 large red onion halved lengthways and sliced lengthways around the core into fine petal shapes
good handful fresh coriander leaves good handful mint leaves
3cm root ginger grated
1 clove garlic crushed
1 small red chilli very finely chopped
1 tsp sugar
salt to taste
40g peanuts toasted in a dry pan and crushed to crumbs
vegetable oil for frying
thai chilli dipping sauce to serve
Mix together all the bhaji ingredients and toss in the flour and ground peanuts then add about 90m1 of water so that everything is coated in a thick batter.
When ready to serve heat the oil and deep fry handfuls of the mixture in small batches until golden.
Eat immediately letting everyone get a dunk in the dipping sauce.
The vegetable mix can be made up hours ahead just add the water before blast off.
