Swordfish brochettes recipe and books

mediterranean

900g swordfish
2 tbpsns olive oil
juice of 1 1/2 lemons
small bunch fresh marjoram finely chopped or 1 tbspn dried oregano
2 green sweet peppers
1 red onion peeled and quartered
salt and freshly ground black pepper

Slice the fish into large bite sized cubes.
Beat the oil lemon juice herbs and seasoning together and toss the fish in this until it is well coated.
Cover and leave to marinate for 34 hours in the refrigerator.
Slice the peppers into quarters trim them and discard the seeds and stalks.
If the quarters are too large slice each one across the middle.
Take the onion layers apart.
About 30 minutes before the fish is to be cooked thread the cubes on 46 metal skewers alternating with one piece of onion and one of pepper.
Brush all the food on the skewers with the marinade.
Grill the souvlakia briefly on charcoal for about 34 minutes on each side or grill under an ordinary grill (placing them not too near the heat) for 23 minutes only on each side.
Once they have been turned over brush them again with the marinade to keep them moist.

There is excitement whenever a kaiki with a huge swordfish on board comes into the small harbour of Patitiri on the Aegean island of Alonnisos. Sometimes two or three children win be seen carrying the glistening creature to a particular restaurant. Apart from feasting our eyes it also means feasting our palates in the evening as xifias souvlaki or swordfish brochettes will be featured in most restaurants. If the souvlakia are to be served alfresco a large salad and lots of fresh bread will be accompaniments enough; otherwise serve the skewers with steamed broccoli and boiled potatoes.
