Tandoori chicken recipe and books|

4 pieces of chicken skinned
1 teaspoon salt
1 garlic clove peeled and crushed
1 tablespoon tomato puree
1 tablespoon curry powder (mild or hot to taste)
2 bay leaves finely crumbled
juice of l/2 lemon
450ml plain unsweetened yogurt
75g butter melted
2 tablespoons paprika
1 lemon quartered to garnish
Preparation and cooking time: 1 hour
Oven: 200¡C 400¡F Gas Mark 6
Score the chicken flesh with a sharp knife.
Place the chicken pieces in a casserole.
Mix together the salt garlic tomato puree curry powder bay leaves and lemon juice and stir in the yogurt.
Pour this sauce over the chicken then pour on the melted butter leaving any foamy sediment behind.
Cover the casserole and cook in a preheated oven (200c/400f/gas6) for 50 minutes.
Pour off the sauce and keep it hot.
Sprinkle the paprika over the chicken rubbing it into the flesh and return the dish uncovered to the oven for 5 minutes.
If the sauce seems to be separating liquidize it until smooth.
Serve the sauce separately garnished with lemon wedges.
Side dishes of raw green and red pepper rings and thin onion rings; banana slices dipped in lemon juice and rolled in desiccated coconut; and canned mandarin oranges add colour and interest.
If you have time to marinate the chicken pieces in the sauce all day or overnight the dish is even better.
Pour on the melted butter just before cooking.
