Tomato and garlic sauce recipe and books|

1kg fresh lamb bones chopped
12 cloves garlic
1 tbspn tomato puree
Salt and pepper
4 tspns dried oregano
3 fresh rosemary sprigs
1kg soft ripe tomatoes cut into quarters
250ml dry white wine
500ml tomato juice
Roast the bones in a roasnng tray in an even preheated to 230¡C/450¡F/gas mark 8 until golden (about 30 minutes).
Add the cloves of garlic and cook until they in turn become golden.
Add the tomato puree and cook in the oven for a further 5 munutes.
Add salt and pepper the herbs and tomatoes and cook until the tomatoes are soft and mushy
Remove from the oven and place the contents of the tray in a saucepan.
Deglaze the tray with the alcohol.
Add the liquid to the pan with the tomato juice.
Cover with cold water and bring to the boil then simmer for about lth hours.
Remove the bones.
Liquidize the remaining contents of the pan and pass through a sieve.
Return to the pan and reduce until you get a strong flavour then pass again through a double layer of muslin.
Just before the sauce is required heat through and thicken by adding the butter in small pieces and whisking gently
Excellent served with Saddle of Lamb with a Herb Crust and Couscous.
