Bombay potatoes recipe and books

bombay potatoes

1 lb potatoes
2 tbs vegetable oil
1/2 Spanish onion thinly chopped
2.5cm cubes of ginger chopped.
1 tspn white cumin seeds
1 tspn mustard weds
1 tspn turmeric
1 tspn mango powder
1 tspn chilli powder
1 tspn garam masala.

Scrub the potatoes (if they are new you dont need to peel them).
Boil up a pan of water and cook the potatoes. Heat the oil and fry the cumin and mustard seeds for a minute or so until they pop.
Then fry the ginger strips (1 minute) and the onion (2 minutes).
Add the turmeric mango powder and chilli powder (optional) and stir fry for 2 more minutes.
Then put the potatoes into the pan mixing in well adding water as needed.
When bubbling add the garam masala stir fry for a couple more minutes then serve.

One of the most popular restaurant vegetable dishes it is particularly delightful with tiny new potatoes.
