12 fresh plum tomatoes
4 garlic cloves peeled
sea salt and freshly ground black pepper
6 tablespoons chopped fresh basil
Preheat the oven to 120C/250F/Gas 1/2.
Slice the tomatoes in half lenethways and scoop out the seeds.
Crush the garlic with a little salt to a smooth paste.
Add the basil and some black pepper.
Spread this mixture evenly on the cut surfaces of the tomatoes.
Place upright in a suitable ovenproof dish and pour in enough olive oil to come one third of the way up the tomatoes.
Cook in the preheated oven for 3 hours or longer.
The result should be almost like sun dried tomatoes as they will shrivel as they cook.
Check the olive oil level occasionally.
The longer the tomatoes cook the better.
