Trout cooked with almonds recipe and books

Four 170 to 230g rainbow trout cleaned
2 tablespoons seasoned flour
2 tablespoons lemon juice
85g flaked almonds
Salt and pepper to taste
1 to 2 tablespoons chopped fresh herbs

Trim the tail and cut off the fins of each trout using kitchen scissors.
Coat in seasoned flour dusting off the excess.
Heat the butter and oil in a large frying pan.
Carefully add the trout two at a time and fry for 6 to 8 minutes turning halfway through the cooking time.
Drain the fish and sprinkle with lemon juice.
Keep warm.
Add the almonds to the pan and cook for 1 to 2 minutes stirring until golden.
Stir in a little seasoning and the herbs.

Serve immediately.

Note: the flaked almonds can be replaced by an equai quantity of coarsely chopped hazelnuts or whole pine nuts.
