Veal chops with marjoram sauce recipe and books

veal chops with marjoram sauce

4 large veal chops
25g butter
1 tablespoon vegetable oil
1 medium onion peeled and finely chopped
1 garlic clove peeled and finely chopped
3 tablespoons chicken stock
3 tablespoons dry vermouth
1 tablespoon chopped marjoram or
1 teaspoon dried marjoram
salt
freshly ground black pepper
4 tablespoons double cream

Fry the chops in the butter and oil in a flameproof casserole over moderate heat for 4 minutes on each side.
Remove the chops and keep them warm.
Fry the onion and garlic for 3 minutes stirring once or twice then pour on the stock and vermouth and stir well.
Return the chops to the dish add the marjoram salt and pepper.
Bring the sauce to the boil.
Cover the dish lower the heat and simmer for 30 minutes.
Increase the heat bring the sauce to the boil again and boil to reduce the liquid slightly.
Add the cream and allow just to heat through.
Taste the sauce and adjust the seasoning if necessary.
