4 celery sticks
4 cloves garlic
1 bay leaf
1 sprig fresh thyme
10 white peppercorns crushed
250ml dry white wine
50ml white wine vinegar
salt and pepper
Chop all the vegetables coarsely
Put all the ingredients into large saucepan.
Bring to the boil then simmer for 20 minutes.
Pass the stock through a double layer of muslin and leave to cool.
Store in the refrigerator.
For vegetable stock you will need a selection of vegetables such as onions carrots leeks celery courgettes and a potato or two. Basically anything goes. Trim or peel each vegetable as necessary and coarsely chop them. Put them in a pan and add water to cover them completely. Add some seasoning (whole peppercorns are good for stock instead of ground pepper as they can be strained off) bring to the boil and simmer gently for about 4050 minutes. Strain and discard the vegetables or use for a puree. If not using the stock immediately it may be kept in the fridge for 34 days or frozen.
