As far as vegetables go things are moving very fast. Most of our parents were brought up in the postwar years when there was not the vast array of vegetables available that we see nowadays. Consequently a lot of people stick to what they know and quite frankly I think that they are missing out big time. Due to the competition between supermarkets and the increasing interest in food of the British public quality and choice has improved and will continue to do so. These days the average supermarket gives you the choice of six or seven varieties of tomatoes five to ten types of mushrooms and vegetables from Godknowswhere. Greens and salad leaves are good and are getting better but are a little bit expensive for my liking. I don`t think supermarkets exploit local produce as much as they could but if they did I know that freshness and quality would improve (though possibly not the price). Things like the Tesco`s finest range for instance are a move in the right direction and could be stretched to include vegetables can you imagine a nice island unit filled with local organic produce? Fresh beetroots with their leaves celeriac asparagus Swede turnips special varieties of potatoes courgettes with flowers Swiss chard broad beans the list goes on and on and they all grow so well in England. I know because my dad grows them.
As a chef at work I buy and only accept the best organic vegetables but at home I can`t afford to buy a week`s worth of organic veg they cost a fortune. Hence I compromise but I suppose you have to find a happy balance. The fact is organic vegetables do taste better and they`re better for you that`s obvious. They don`t come in uniform shapes and sizes and they are generally not cleaned and ready to eat and I think this is why in Britain organic vegetables haven`t caught on as much as they should have especially in this day and age when everyone`s busy and running about the place. But for friends family or special occasions it is worth the effort and money. And by cooking seasonal veg you`ll always get a cheaper and better quality buy.
The only problem I ever see with the average person`s home cooking is that vegetables are never seasoned properly. Always season your veg a little at a time stirring and tasting as you go. By the way treat yourself to a pack of Maldon sea salt you might no believe me but it actually tastes so much better than ordinary salt.
