100g Plain flour
100g Wholemeal Flour
5ml Baking Powder
150g Brown Sugar
20ml (approximately) Milk
300g Mixed Fruit
2. 5ml salt
Note: This cake is improved by keeping 12 days before cutting.
Sift the flour baking powder salt and spices into the bowl.
Add sugar and butter turn to Speed 1 increasing to Speed 3 as the fat breaks down.
When the mixture resembles breadcrumbs add the egg and milk and mix in thoroughly.
Add the fruit on Speed 1 and switch off as soon as ingredients are incorporated.
If necessary add a little more milk to bring the mixture to a soft dropping consistency.
Turn into a well greased 1 S/2 or 21b loaf tin or 6"/15 cm round tin bake for approximately 1% hours in a moderate oven 350¡F/180¡C/Gas Mark 4.
