Pecan Crusted Chicken Breasts

Amount Measure Ingredient -- Preparation Method6 skinless boneless chicken breast halves
3 tablespoons sesame oil
3 tablespoons vegetable oil
2 tablespoons minced shallots
1 teaspoon grated lemon zest
1 tablespoon lemon juice
1 tablespoon soy sauce
1 tablespoon hot water
1 cup crushed crisp wheat crackers -- (such as Stoned
Wheat Thins)
1/2 cup grated Asiago cheese
1/4 cup chopped fresh basil
2 tablespoons chopped fresh Italian parsley
1/2 teaspoon fresh cracked black pepper
1/2 cup toasted pecan pieces
4 tablespoons unsalted butter -- melted

1. Wash and pat dry the chicken breasts. Place them in a shallow nonreactive
pan. Combine sesame oil, vegetable oil, shallots, lemon zest, lemon juice,
soy sauce, and hot water and pour over chicken breasts. Set aside in the
refrigerator to marinate for 30 minutes or up to 2 hours.

2. Preheat the oven to 450.

3. In the bowl of a food processor, combine the crackers, Asiago cheese,
basil, parsley, pepper, and pecans and process to crumbs.

4. Remove the chicken breasts from the marinade and discard the marinade.
Coat both sides of the chicken breasts with the pecan crumbs.

5. Place on a buttered baking sheet, drizzle with the melted butter and
roast for 25 minutes, until chicken is crisp and browned and cooked through.
