Fiery hot beef recipe and books

1 tablespoon palm or brown sugar
500g sliced topside or rump
3 teaspoons grated ginger
1 small onionc grated
1 teaspoon finery chopped garlic
1 tablespoon dark soy sauce
21/2 tablespoons vegetable or peanut oil
3 spring onions cut into 3 cm pieces and quartered lengthwise
200g canned baby corn drained
80g sliced bamboo shoots drained
2 green chillies seeded and sliced
2 red chillies seeded and sliced
2 tablespoons fish sauce
1/2 cup water
1teaspoon cornflour

Crush palm sugar to a fine powder.
Cut the beef across the slices into very thin strips.
Place in a dish with the ginger oniongarlic sugar and dark soy.
Mix well cover with plastic wrap and leave for 1 hour turning occasionally.
Stir fry the spring onions baby corn bamboo shoots and chillies for 11/2 minutes then remove from the pan.
Re heat the pan to very hot and quicklly stir fry the beef until it has just changed colour.
Mix the fish sauce water and cornflour stir into the dish with any remaining marinade and cook stirring until thickened.
Return the vegetables and stir fry together 12 minutes.
Serve over a mound of white rice.
Hint. Make a milder but equally tasty and attractive dish by substituting green and red capsicum for the chillies.
