New Fish cakes recipe and books

fish cakes

800g potatoes
a little butter
700g haddock or cod cooked
a handful of chopped parsley
1 tbsp chopped dill
olive oil and butter for cooking
a little flour

Peel the potatoes cut them into chunks and cook them in boiling salted water until tender. Drain and mash with a little butter to make a stiff dry mash.
Flake the fish without mashing it too much and stir it into the potato.
Add the chopped herbs and a grinding of black pepper.
Pat the mixture into eight thick cakes a general roughness looks more appetising once cooked.
Put them in the fridge for 20 minutes to firm up.
This will stop them spreading too much as they cook.
Put enough oil in a shallow pan to cover the bottom then add a knob of butter and let it heat gently until it starts to froth.
Dust the cakes finely with flour.
This is not absolutely necessary but you will get more of a crust if you do.
Slide the fish cakes three or four at a time into the fizzing butter.
Leave for 3 or 4 minutes until a crust has formed on the bottom then carefully flip over and cook the other side.
When they are golden and crisp remove carefully from the pan and serve with the parsley sauce (qv).
