Fish cakes recipe and books

dried kaffir lime leaves soaked (see note)
small onion
thick slices ginger
1 tablespoon chopped coriander leaves roots and stems
1 large clove garlic
2cm piece lemon grass root
1 green chilli seeded
350 g white fish fillets skinned
1 egg
1 1/2 tablespoons fish sauce
8 green beans very thinly sliced
vegetable oil for shallow frying

Drain kaffir lime leaves and shred them very finely discarding the stiff central rib.
In a food processor chop the onion ginger coriander garlic lemon grass and chillies to a paste.
Cut fish into cubes and chop in the food processor until the mixture is quite smooth.
Add 35 tablespoons cold water the egg and fish sauce and process until the mixture is smooth.
Add beans and shredded lime leaves mixing well.
Heat shallow oil.
Add tablespoons of the mixture and fry on both sides until golden and cooked through. Remove and drain on absorbent paper.
Serve hot on a plate garnished with lemon wedges and parsley and accompanied by a dish of cucumber sauce.
Serve with sweet chilli sauce.
Note. Soak kaffir lime leaves for at least 15 minutes in hot water. Fresh lemon or lime leaves blanched quickly in boiling water can be used instead.
