Fish stock - Free recipe and books

So you would like to know how to make Fish stock - Free recipe! It is not hard, follow the steps below and enjoy your own creation. Check our books section as well!

fish stock

50g butter
1 onion thinly sliced
1 leek thinly sliced
2 celery sticks chopped
1 garlic clove (optional)
1kg fresh sole bones
250ml dry white wine
250ml noilly prat
3L water
10 white peppercorns crushed
1 bay leaf
1 small bunch fresh parsley
1 sprig fresh thyme

Melt the butter in a large saucepan add the onion and cook until soft but not coloured.
Add the leek celery and garlic (if using) and cook until tender
Chop the sole bones and soak them in cold water to remove any trace of blood.
Add the cleaned bones to the vegetable mixture and sweat for a couple of minutes.
Add the wine and the Noilly Prat and reduce the liquid by half.
Cover with the water and bring to the boil removing any scum that rises to the surface.
Add the peppercorns salt and herbs and simmer for approximately 30 minutes.
Pass through a fine sieve and leave to cool in a bowl.
When cold store in the refrigerator.
It will keep for 23 days.

We use mainly sole bones as they give a better and more pure flavour. You can also use turbot or brill or a mixture.
