Florentine baked fish recipe and books

4 pieces fillet of cod (200g each)
juice 1 lemon
400g spinach washed and picked over
salt pepper
250g potatoes boiled in their skins peeled and sliced
450g tomatoes de seeded and chopped
1 clove garlic chopped
150 ml pint stock
50g grated Parmesan cheese
40g butter

Rinse the pieces of cod under cold water pat dry trickle lemon juice over them.
Butter an ovenproof dish place the pinach in it arrange the fish on top and season with salt.
Place the potato slices round the edge and the chopped tomatoes and garlic over the fish.
Pour over the stock.
Season with pepper and scatter over the grated cheese.
Add the butter divided into small flakes.
Bake at 220C/425F/gas 7 for 20 minutes.
